Spatchcocked and Roasted Whole Hen

Perfectly moist with fresh herbs and lemon or Moroccan spices rubbed under the crispy skin, these are everyone’s favorite item!

Spatchcocking is a technique for preparing poultry which involves cutting out the backbone and flattening the bird so that the breast and legs are on the same level. It makes for easier carving and serving, as well as a juicer meat.

3lb Organic Whole Hen. This weight is estimated from the farmers and is pre-cooking. Once cooked they are closer to about 2lbs and serve 2-3 people.
